Valentine's Day Bridal Shower

My BFF is getting married next month and we threw her a shower last weekend with a lovely Valentines day theme. Her wedding colors are Black & Red and with the time of year it all worked out perfectly!

It also turns out Im completley and utterly addicted to pintrest! just about all of the recipies I made were found there.

We served lasagna, salad & Bread with these Caprese bites!

My BFF's name is Lindsay and growing up my Dad always called Lindzer Trarts Lindsay Tarts so I made these. They were easy to make and fun too - I'll be adding them to my Christmas cookie list!

these lil bites of goodness tasted great but looked nothing like the picture I was after!

 Now these were so easy to make and so delish! Strawberry cheese cake bites- ahhh I could eat the entire plate myself! Ill def be making these again in the future!

 cake table - if you look close you see these - Marsh mellow pops. Fun idea and pretty & tasty!

I admit I was a little stressed out about how the shower would come together but in the end it was a success!

Best Blueberry Muffins


In a large bowl combine
1/2 Cup rolled oats
1/2 Cup Orane Juice


In another bowl Combine
1 1/2 Cup Flour
1/2 Cup Sugar
1 1/4 Tsp Baking Powder
1/2 Tsp Salt
1/4 Tsp Baking Soda
1/2 Cup Veg Oil
1 Egg Beaten


add to oats and OJ mixture - mix until all is coated. Gently fold in 1 Cup blueberries. Spoon into muffin tin with liners.

Blend 2 Tbs Sugar and 1/4 Tsp Cinnamon  sprinkle over batter.


Bake at 400 for 18-22 mins- makes 12 muffins

Easy Summer Cake

1 jiffy Yellow Cake mix
2 C milk
1 large pkg of Vanilla pudding
1 20oz can crushed pineapple (drained)
1 8oz pkg of Cream cheese
1 large Cool Whip

Prepare cake as per directions on box in a 9x13 pan
mix milk, pudding and cream cheese spread over top of cake
top with crushed pineapple
frost with Cool Whip

Refrigerate until serving,

Aunt Kim's Tongo Bars

This week I am not hosting our weekly dinner with friends. Since I don't have to worry about a menu I offered to bring dessert. So here is what I'll be making tomorrow

2/3c Melted Butter
2c packed Brown Sugar
2 eggs
(beat these together)

add
2c flour
1tsp Baking Powder
1tsp salt
1/2tsp Baking Soda

Put in a greased 9x13 pan
Top with 1 cup Chocolate Chips
Bake at 350 for 35 mins
